I got up this morning, knowing that I would be busy today - I had all those veggies to deal with, as well as all the stuff I normally do on Mondays. I reluctantly got up and got started, only to find out that Ron had done the dishes for me last night! Bless his heart! I didn't know that he had done them while I was on the pute last night - I thought he had gone to bed - I guess I was really paying attention to writing my blog and blocked everything else out. That was a big relief to me, and gave me more time to play on the pute!
I sorted out the green beans - I put about half of them into a smaller box for Josh to pick up to take home with him. I sorted out what apples I want to keep, and dug out a small box for Josh to put the apples he wants in, too. The tomatoes are all ours! No sorting needed there!
When I was done there, I sliced - well, chunked - up the largest of the orange tomatoes for my lunch. I even drizzled ranch dressing over them, so there would be some kind of calories there! I know tomatoes, themselves, don't have many calories, so I knew I needed something else. I had a second tomato, too, though not quite as big as the first one, and no more dressing. This one was just plain - on a different plate, even.
I dumped the rest of the box of green beans into the sink and started snapping them. I estimate that we'll get three meals out of these. THREE! I knew Ron would pick too many, but damn! I think I'll blanch them and put two meals' worth in the freezer. They sure are gonna be good!
I went and laid back down for a bit, then got back up and did my exercises, snapped more beans (I worked on these on and off all day), and played on the pute a bit more. Josh showed up and took the stuff I had ready for them. He seemed the most thrilled about the apples, mostly because he has a juicer, and can "use" the apples the most - not only in cooking, but by juicing them, also. Not long after he left, Ron got home from work. I had put his cabbage (from Bert) on earlier - put it in the pan, so it would be room temperature and ready to cook when he was ready for supper - and when he got home, I turned the burner on, so it would cook/warm up slowly.
For my supper, I zapped the rest of the ham slices from the package I had opened Saturday night. I cooked the rest of a can of corn that was in the fridge, too, and sliced up another large orange tomato. So, my supper was ham, corn, and tomatoes. It was pretty tasty.
Of course, when I came back out and put my food in MFP, I was tremendously low on calories for the day - something like 700. MFP hollered at me in giant red letters again. It was really weird, because I sure felt pretty full...sigh. I went ahead and put in for a popcorn & milk snack, but that still had me at almost 500 calories short for the day, so I don't know what I'm gonna do. Maybe I should lower my calorie count down to 1000. I don't know.
Looking forward to lunch tomorrow with Bert, when I give her some apples and some other stuff I have for her. Love spending time with my friends!
